So we just had our first bite of the Apple Pie Cupcakes and I can say that they melt in your mouth. The cinnamon whipped icing is definitely a keeper. I didn't use too much icing in order for the cake to shine. And it did shine! My mother in law can't stop raving about it!! I think I will definitely keep the recipe in my files and I hope you'll give it a shot too. (Oh and make sure to halve the recipe - otherwise you'll end up with 24 cupcakes).
The caramelized apples sit on top of the batter before baking.
