Chicken and Cheese Quesadillas

I was surprised that Bike Boy agreed to this recipe since he doesn't like cheese so much. Cheese sauce is totally out of the question for us! He will eat a little bit of cheese so I knew these were going to be a challenge. It actually turned out well and while they were not too cheesy they were fabulous! My recipe was based on a recipe from Annie's Eats.

Chicken and Cheese Quesadillas
2 teaspoons of chili powder
1/2 teaspoon of cayenne pepper
1/2 teaspoon of paprika
3 tablespoons of fresh cilantro, minced
2 tablespoons of olive oil
4 tablespoons of lime juice
1 teaspoon of salt
1 tablespoon of cumin
1 teaspoon of red pepper flakes
 (This is your "rub," combine together in a bowl and whisk together)

2 boneless skinless chicken breasts, diced
A quarter to a half of a red onion, chopped.
1 roma tomato, seeded and diced
flour tortillas (you can use any kind)
Cooking spray
Shredded Cheese

Mix spices together with the olive oil and lime juice. Heat skillet to medium high heat and saute chicken. Add spice rub to the mixture and saute the chicken mixture for about 5 -7 minutes. The chicken should be white with no pink showing.
Add onion and tomato to chicken mixture.
Lightly brush the tortillas with olive oil; flip over on the work surface so the oiled side is facing down. Add some shredded cheese on one half of the tortilla and a quarter of the chicken mixture on top of the cheese. Top with some additional cheese and fold over. Repeat with remaining tortillas and chicken mixture.
Cook the assembled tortillas over medium high heat in a lightly oiled skillet until cheese is melted and the outside is browned. Slice into wedges and enjoy!
Note that the rub is spicy so you could eliminate the cayenne and go easy on the red pepper flakes. :)
