Sweet and Spicy Baked Beans

For our holiday party this past weekend, I made these baked beans as a side dish. The combo of sugar and spice make these beans an unique and tasty side dish for your family get-togethers, holiday parties, or just a week night meal. They are super easy to make to!


Sweet and Spicy Baked Beans
  • 1 boneless pork chop (4 oz), diced
  • 1 med yellow onion, chopped
  • 2 bell peppers (red or green or a combo), diced
  • 1 tbsp extra virgin olive oil
  • 4 tbsp yellow mustard
  • 3 tsp salt
  • 2 tsp chili powder
  • 2/3 c prepared BBQ sauce
  • 1/2 c light brown sugar
  • 2 cans (15 oz) pinto beans, rinsed and drained
  • 2 cans (15 oz) white beans, rinsed and drained
Directions:
  • Preheat oven to 350 degrees.
  • In a medium skillet, cook pork chop, onion, bell peppers in the the olive oil over medium high heat for about 5-7 minutes. You want the pork chop to be cooked and the onions and peppers to soften.
  • Remove from heat and add remaining ingredients.
  • Transfer mixture to a 9x13 baking dish and cook for 30 minutes or until beans are tender.
