Healthified Chocolate Cupcakes

So I have never been one for making desserts low calorie, I just have not figured out the trick but these babies are pretty close as far as cupcakes go. They have applesauce in them, does that count? :-)
One word though, generously grease the cupcake liners if you use them, they cupcakes tend to stick the paper. Found that one out the hard way. :)


Chocolate Cupcakes
1 1/2 c all purpose flour
3/4 c sugar
1/4 unsweetened cocoa
1 tsp baking powder
1/2 tsp salt
1/2 c unsweetened applesauce (I used just a little bit less)
1/2 c milk
1/2 c egg whites or the whites of 4 eggs
1 tsp vanilla

Preheat oven to 350
Mix dry ingredients together in a large bowl.
Mix wet ingredients in a smaller bowl.
Add wet ingredients to dry ingredients and stir to combine.
Bake for 15-20 minutes until a toothpick inserted comes out clean.

Baking Issues

It seems everything I bake this week has some kind of issue with it.
  • The first cake I made was a vanilla bean cake with chocolate buttercream frosting. It was good but I think I overbaked it (and I actually took it out of the oven 15 minutes before the recipe said). It wasn't as light and fluffy as I had hoped. I also measured in ounces vs cups which was very different for me. 
  • I made mini blueberry muffins with applesauce instead of oil/butter. And while they tasted okay, I believe I used too much applesauce and the batter was too runny. On the plus side, I figured out how to make the batter not purple anymore! You have to mix the blueberries with flour and or sugar before adding to the batter. That's one thing my momma never told me. Well, we only ever made the blueberry muffins from Jiffy. Oh man, those were tasty. 
  • And then I tried to make some cupcakes with nutella frosting. So, Bike Boy has been on a health kick lately and now buys these eggs with extra omega-3 and what not in them. Well I grabbed them instead of the regular large grade a eggs. The cupcakes had an "eggy" taste as soon as you bit into them. I covered them with the frosting and hoped for the best. 
My friends, my baking mojo has left me. I did try some new stuff and learned what not to do in some instances. But I will be glad when summer is here and I can really get back to baking and take the time to really explore and break down recipes.

I will try again before Spring Break is over and redeem myself in the kitchen. I'm telling ya, I had one crazy baking week.

Been in a slump lately

Part of it is that I am so busy with my job and barely have time to make dinner each night. However, I just am not feeling the baking vibe like I thought I would. I made a cake on Monday and I think I overcooked it, even though I cooked it for 10 minutes less than the recipe called for. Weird. I also tried my hand at blueberry muffins made with applesauce instead of oil or butter and the batter was so runny, they baked up okay but not my favorite. I guess since these not so great successes in the kitchen, I have been less motivated to try again. I really want to. I love to bake.

Have you ever felt that way? I need some motivation AND some good recipes to try! It seems I keep picking recipes that are duds. I think I'll go check my google reader, my blog friends won't let me down. :-)

Spring Break is here!

And that means more days of baking!! Sorry I haven't been around to blog much. We have been shopping for a new car and it the research Bike Boy puts into it is insane! My brain is now full of all sorts of car features and comparisons!
But I will be here with new posts and new goodies this week. Basketball and Baking are two of my favorite things and I must make sure I get my fill before the week is up!
