Wow, this chocolate cake is...

amazing, delicious, decadent, yummy, and every other complimentary word you can think of. I adapted the recipe from the Hersey's cocoa website. I did have some issues with the cake sinking in the middle but I think that can be easily remedied by adding less baking powder or using half cake flour and all purpose flour. I like the texture that the cake flour adds to the cake but it does lack some stability in the middle of the cake. As long as you have the frosting that goes with this cake, all will be good and delicious. I can attest to the deliciousness, Kevin took the extra cake to work (so we wouldn't eat ALL of it) and there was a line to get a piece and it was gone in less than an hour. I guess chocolate cake is always a winner with these guys. :)

Chocolate Cake
Adapted from Hershey's Cocoa Website
Ingredients:
  • 2 cups sugar
  • 1-3/4 cups cake flour
  • 3/4 cup HERSHEY'S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water 
Directions:
  • Preheat oven to 350°F. Grease and flour two 9-inch round baking pans.
  • Whisk together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.
  • Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. 
  • Stir in boiling water (batter will be thin). Pour batter into prepared pans.
  • Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean.
  • Cool 10 minutes; remove from pans to wire racks. Cool completely.
Chocolate Frosting
Adapted from Hershey's Cocoa Website

Ingredients:
  • 1/2 cup (1 stick) butter or margarine
  • 2/3 cup HERSHEY'S Cocoa
  • 5 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
Directions:
  • Melt butter. 
  • Stir in cocoa. 
  • Alternately add powdered sugar and milk, beating to spreading consistency.
  • Add small amount additional milk, if needed. 
  • Stir in vanilla. About 2 cups frosting.

Happy Anniversary to Us!
